I have a half hour music doc and a local audio wizard has agreed to mix it for me, so my question is: how do I export all of the audio tracks to his computer, and how do I get the media there as well?  Thanks!

Usually you'd use AAF for the audio, maybe h264 .mov for video.

This assumes the local audio wizard is using software that accepts AAF.

Only saying this because I gave an embedded AAF to someone who couldn't get it into Adobe Audition, because this software didn't support AAF.

The answer to this particular problem was to import the AAF into Premiere first and send that timeline to Audition.

This might be over simplistic but use a common in-point and out-point between you and the audio house, say 00:59:30:00 to 01:30:30:00 (obviously make sure DF/NDF matches, 44.1/48 etc.) and then export each of your channels ISO'd as WAV or AIF. Export a MP4 with matching TC and a reference audio channel embedded so they can check sync on their end and then they would import into their audio software, do their thing, and export back to you a stereo mix.
